Consulting
F&B Consultingand Design
Concept To Completion.
This engagement provides end-to-end F&B advisory to guide your project from concept to opening, ensuring the business is commercially viable, operationally sound, and launch-ready. Chefs Table structures and manages each stage of the setup — concept definition, site selection, design and fit-out oversight, kitchen planning, menu engineering, supplier setup, staffing, and pre-opening readiness — so capital is deployed efficiently, regulatory requirements are met, and operational risks are addressed early. The objective is to reduce costly setup errors, align design and operations with the business model, protect margins from day one, and deliver a restaurant that opens with systems, standards, and teams in place to achieve faster stabilization and sustainable performance.

Onboarding & Project Setup
Scope, budget, timeline, and decision structure are defined at the outset to avoid misalignment later. The concept intent, target market, and commercial expectations are agreed, and a delivery plan is set with milestones and responsibilities. Key risks are identified early so they are managed, not discovered mid-project.
Business Setup & Licensing Pathway
The correct business activity and licensing pathway are confirmed, and the approvals sequence is mapped so it runs in parallel with design and build. Channel partners are coordinated where required, and submission requirements are clarified to prevent rework or delays. The focus is on keeping the project moving without regulatory bottlenecks.
Concept Definition & Brand Direction
The concept is refined into a clear, market-ready proposition, including positioning, service style, menu direction, and price architecture. The guest journey and operational model are aligned with the brand direction so the concept is coherent across food, space, and service. This forms the basis for landlord discussions, design briefs, and commercial planning.
Location Strategy & Site Selection
Potential locations are assessed against commercial terms, footfall, access, competition, and delivery potential. Operational constraints such as ventilation, grease trap capacity, storage, loading access, and authority requirements are reviewed before any commitment. The site selection process focuses on long-term viability, not short-term appeal.
Design Development, Approvals & Fit-Out Planning
Layouts are reviewed from an operational perspective to ensure efficient workflow, capacity planning, and service flow. Design development is coordinated with authority requirements to avoid late-stage redesigns. Fit-out scope, sequencing, and readiness milestones are structured to keep the build aligned with the opening timeline and operational needs.
Kitchen Planning, Equipment Specification & Procurement
Production flow is mapped to the menu and service model, with equipment specified accordingly. Procurement is structured to balance performance, budget, lead times, and after-sales support. Installation and commissioning requirements are planned early to ensure equipment is tested and operational before training and soft opening.
Menu Engineering, Costing & Supplier Setup
The menu is engineered to balance appeal, throughput, prep load, and kitchen capacity. Recipes are costed to target margins, with portioning standards and yield assumptions defined. Supplier setup is aligned with quality, consistency, and pricing, with purchasing structures established to prevent early cost drift.
Operating Model, Staffing & Training
The operating model is finalised, including service sequence, hours, capacity, and delivery channels where applicable. Staffing structure and key roles are defined, with hiring priorities aligned to the opening timeline. Core operating standards and training plans are implemented to ensure readiness across food safety, service, and daily operations.
Pre-Opening, Launch & Handover
Pre-opening readiness is managed through structured checklists covering equipment testing, supplier deliveries, stock build, and mock service. A soft launch phase is used to validate workflows, ticket times, and quality consistency, with adjustments made before full launch. The project concludes with a formal handover, post-opening review, and stabilisation plan to support performance beyond opening.
Indicative delivery: 4–8 months from onboarding to opening. Project timeline subject to scale and complexity of the project.
